We started off as usual by the natural ingredients for an ice cream base such as cream, milk and sugar. Then the fun starts by slowly pouring small amount of the ice cream base to the intensely green Matcha powder, whisking it smoothly to prevent any lump.
The matcha we have chosen is from Niko Neko, widely known in the artisanal industry to be one of the best quality matcha powder available. The matcha used has the perfect balance between umami, bitterness and smoothness.
